1 1/2 pounds chicken breasts (boneless & skinless), chunked to large pieces

1 teaspoon cumin

1 teaspoon salt

1/2 cup cream (heavy whipping)

1/2 green pepper, chopped

1/2 onion, chopped

1/2 pound bacon, cooked & crumbled

1/2 teaspoon pepper

1/2 teaspoon xanthan gum or tapioca starch

1/4 teaspoon paprika

2 cloves garlic, minced

2 jalapenos, seeded & chopped

3 cups chicken broth

3 tablespoons butter

3/4 cup cheese (cheddar)

3/4 cup cheese (Monterey Jack)

6 ounces cream cheese

1. Set the IP to SAUTÉ. Add the butter, green peppers, onions, jalapenos, and seasoning; sauté till the onions are translucent. Add the broth, chicken, and cream cheese. Lock the lid and close the pressure valve. Set to MANUAL HIGH PRESSURE for 15 minutes. NPR for 5 minutes when the timer beeps and QPR; unlock the lid and open.

2. Set the IP to SAUTÉ. Transfer the chicken to a plate; shred using 2 forks and return to the pot. Add the cheeses, cream, and bacon; stir till the cheese is melted. Sprinkle with the xanthan gum; stir to mix. Simmer for a couple of minutes till thick.
